Vegan Gluten Free Coconut Bread

2 Tbsp ground flaxseed
1 1/4 cups plus 6 Tbsp plus warm water
1 tsp vanilla
1 cup sorghum flour
3/4 cup brown rice flour
3/4 cup tapioca flour
3/4 tsp xanthan gum
2 tsp baking powder
2 tsp cinnamon
1 cup sugar
1 2/3 cups shredded coconut
1 Tbsp coconut oil, melted/liquid
Preheat oven to 350.
Mix flaxseed and 6 Tbsp water in a bowl. (I don't know if you need to do this separately and let it sit, but I did.)
Stir flours, xanthan gum, baking powder, and cinnamon together. Add in sugar and coconut, stir until mixed.
Add vanilla and 1 1/4 cups warm water to the flaxseed and water, whisk together. (I did this with a fork.)
Pour wet ingredients into dry, stir until barely mixed. Add coconut oil, stir it all together.
Pour into a greased and floured or parchment papered 8 1/2-inch loaf pan. (I use parchment.) Let sit for ten minutes, then bake for an hour or until a toothpick comes out clean.
Cool on wire rack for five minutes, then remove from pan and let cool on the wire rack.

This turned out pretty good, and it's really good heated with a little bit of Earth Balance on it. (I have their buttery sticks.) It still has that vague taste that most of my gluten free baked goods have; I'm starting to wonder if it's the xanthan gum. This says arrowroot powder isn't quite as good but can help if you're not using xanthan gum, so I might try that next time I make something.
