The treats for the last two days wore me out! Today's treat is one I didn't even have to type because I already had it typed out. I got this recipe from [livejournal.com profile] lakeeffectgirl, who got it from Vegetarian Times. I have successfully served these to omnivores, but I make them because they're vegan and gluten-free. (Note: they do call for oats and oat flour. Oats do not naturally have gluten, but are often contaminated in processing. Those of you who don't eat gluten probably know what kind of oats you can and can't eat. If you're making these for people who eat gluten-free, you might want to check with them before you purchase ingredients.)

Walnut Oatmeal Chocolate Chip Cookies

2 c. walnuts
3 tbs. canola oil
1 c. light brown sugar
2 tsp. vanilla extract
1 1/2 c. oat flour
1 tsp. baking soda
1 tsp. salt
1/4 tsp. cinnamon
2 c. rolled oats
3 3.5-oz. bars bittersweet vegan chocolate, chopped, or 1 1/2 c. vegan chocolate chips

Preheat oven to 350. Coat 2 baking sheets with cooking spray or line with parchment.

Blend walnuts in food processor 30 seconds or until ground into fine meal. Add canola oil and blend 2-3 minutes more, or until mixture is like peanut butter. Transfer to bowl.

Whisk brown sugar and 1/2 c. water in small saucepan an bring to boil. Pour this over ground walnut butter, add vanilla extract, and stir until no lumps remain.

Whisk oat flour, baking soda, salt and cinnamon in separate bowl. Stir into walnut mixture. Cool 10 minutes. Fold in oats, then chocolate.

Shape cookie dough into 2-inch balls, and place 2 inches apart on prepared baking sheets. Flatten cookies with bottom of glassed dipped in water. Bake 8-10 minutes, or until cookies begin to brown and tops look dry. Cool 3 minutes on baking sheet before transferring to rack to cool completely.

Note: I no longer eat chocolate. Last time I made these, I substituted chopped dried cherries for the chocolate chips, and they came out absolutely delicious. Do not buy the Sun-Maid dried cherries; they have no flavor. Mariani dried cherries do have flavor, and one bag was the right amount for a batch of cookies. Don't chop them too small! I found when I was eating the cookies that I was more excited by larger cherry chunks.
